Here's a recipe for a nice, fruity dessert that just finishes off a summer meal!  This recipe is gluten free, is easily made with fresh or frozen peaches and doesn't take too much effort! 

Let's get to the recipe. . . 

Peach Crisp - Gluten Free

Into a bowl add in and mix together
About 5 fresh peaches, peeled and sliced, or 1 package (600g) frozen peach slices, thawed.
1 tbsp. cornstarch
1 tbsp. b. sugar
1 tsp. fresh lemon juice
1 tsp. vanilla

Place the peach mixture into a greased 10" skillet, or a 8x8 square baker or even a pie dish will work.

Topping
In a bowl, combine and mix until crumbly - don't be afraid to use your hands.
1 c. oats - gluten free if needed
2/3 c. b. sugar
1 tsp. cinnamon
1/2 tsp. sea salt
1/2c. cold butter - cubed into small pieces or you can grate it (I freeze mine, it makes the grating easier)

Sprinkle topping over the peaches and bake at 350 for about 40 minutes (may be less, may be more depending on your pan size) until the peaches are bubbling around the edges and are tender when poked with a fork.

Let cool slightly and serve with ice cream.
