This brownie should be called 'the disappearing brownie' - I had 1 tiny bite to test the brownie and the next thing I knew - it had disappeared. I think this means they liked it! It's a deliciously chocolatey, beautifully textured, flourless brownie. It is great with our without icing and with or without the chocolate chips sprinkled on top. It's really easy to make, nothing too difficult and your home will smell amazing while they're baking!
Let's get to the recipe. . .
Flourless Brownie or The Disappearing Brownie
Melt together (I used my microwave but use short bursts and stir in between so you don't burn the chocolate)
1/3 c. butter
8 counces semi sweet bakers chocolate
Stir in and mix until combined
3/4 c. sugar
1/4 tsp. salt
1 tsp. vanilla
2 lg eggs (1 at a time, stirring between each addition)
3 tbsp. cocoa
2 tbsp. cornstarch
Sprinkle 1/4 c. mini chocolate chips over top - optional.
Pour the batter into a parchment lined 8x8 baking dish.
Bake at 350 for about 20-25 minutes until the center is set and a toothpick comes out clean. You don't want to overbake it, so watch carefully at the end.
Let cool, remove from pan, ice if you like and. .
