The Morning Glory Muffin - Perfect for Anytime!

I'm going to admit this isn't always my first choice of muffin.  But, there's always a but!  I made these muffins with a few changes - no raisins or walnuts - which I'm not fond of and replaced them with dates and pecans and wouldn't you know it - I really like this muffin!  It's a really nice texture, super moist and it's a bit healthier than some.  So, go ahead - make the muffin and if you'd rather have raisins and walnuts - you do you;)


Morning Glory Muffins

Mix together in a medium bowl
1 c. flour (spooned and leveled)
1 c. whole wheat flour (spooned and leveled)
2 tsp. b. powder
1 tsp. cinnamon
1/2 tsp. b. soda 
1/2 tsp. ground ginger
1 /2 sea salt

Into a large bowl, stir together
2 large eggs
3/4 c. b. sugar
1/2 c. applesauce
1/2 c. veg. oil
1 tsp. vanilla

Add to the wet mixture
 3 c. grated carrots
1 c. grated apples

Add the wet ingredients to the dry, mixing until just combined.

Fold in
3/4 c. dates (I soak mine for a minute or two in boiling water to make sure they're soft)  or raisins would work too.
3/4 c. nuts - I used chopped pecans.

In your 12 cup muffin pan (greased or paper lined) evenly divide the batter.

Bake at 400 for about 12-15 minutes or until the tops pop back when lightly pressed.
Let cool for about 10 minutes before removing to a wire rack to cool.
