The Most Delish Potato!
The coffee shop by our shop always has these luscious roast potatoes that they serve as a side. I can't say that I've had them (I know they'd be delish), but they're a greek potato. So, I found this recipe and OMG, this is so tasty and easy to make. I was a little apprehensive that they would be soggy, cooking them in liquid was not something I had heard of (I know I need to get out more lol) but they are fantastic! They aren't soggy, they are just the right amount of crunch and lemon flavour and they're a throw in the pan kind of recipe (don't forget to stir them - I did and my edges burnt a little)
Let's do this. . .
Greek Lemon Potatoes
Into a 9x13 baking dish, add in
1/2 c. olive oil
1 c. chicken stock
1/4 c. fresh squeezed lemon juice
2 tsp. oregano*
3 garlic cloves*
Add in
3 lbs sliced potatoes - wedges are good, you don't want them too small.
Dot the tops of the potatoes with
2 tbsp unsalted butter
*I did not use either of these and they were delicious
Bake at 400 F for about 70 minutes, stirring a couple of times.
If you want them crispier, you can broil them for a couple of minutes.
