Yes, it's a new year and it seems diet and exercise is one of our most common resolutions. Hmmmm, it's a good resolution for sure, but I think kindness to others should be up there too. And that leads me to this recipe. If you haven't watched Ted Lasso - you should! It's a comedy/drama that is highly entertaining and a real feel good show - it makes you happy to watch it. It's about kindness, helping others and building community - I'm likely not explaining it quite right, but it's such a good show that I hope you can find it if you haven't already. Part of the show is Ted Lasso bringing his boss these biscuits every morning - so when I found the recipe, had to make them. They are delish! So, find the show, make the biscuits and get ready to binge watch Ted Lasso:)
Ted Lasso Biscuits In the bowl of your stand mixer, beat with your paddle attachment until light and fluffy (about 3-5 minutes) 2 sticks (1 cup) unsalted butter
Slowly add in (at low speed) 3/4 c. icing sugar
When combined and light and fluffy, add in (all at once - stop your beater to do this) 2 cups sifted flour (cover your beater with a tea towel to prevent a flour shower) 1/4 tsp. coarse salt (I used sea salt - didn't have coarse and it worked perfectly) Mix on low speed until just combined.
Press mixture into a parchment line 8x8 baking dish (I use a separate piece of parchment to press cover the top of the mixture and press down on this - remove before baking) *if you don't use parchment paper, just be sure to grease your baking dish with butter.
** tip - make your slice marks into the dough before you bake them - it will make for a nicer looking square
Pop into the fridge for about 30-45 minutes.
Bake at 350 for about 45 minutes, or until the middle is firm and they are a light golden brown.
