Have you seen this trend popping up?  Scoopable cookies?  A big, gooey, delish scoop of chocolate chip cookie topped with ice cream.  I mean, OMG!  This is brilliant!  So easy, so impressive and delish.  I've done these twice now, and they're a requested dessert in my house:)  You can use this cookie recipe, or your own favorite chocolate chip recipe - all will work - all will be delish - just don't overbake them.

Let's bake. . . 

Scoopable Chocolate Chip Cookie

Mix together in your stand mixer
1 c. butter, melted 
1 c. b. sugar
1 c. sugar

Add in
2 large eggs
2 tsp. vanilla
1/2 tsp. salt
1 tsp. b. soda

Stir in, or slowly add in 
3 1/4 c. flour

Add in
2 c. chocolate chips.

Using about 1/2 c. of dough, roll into balls and place into your freezer for about 20 minutes.

Remove and add into your 9x9, greased,  baking dish

Use 6-8 balls of dough (I used 5 in the photo, but I should have used more - less still worked fine, just not as impressive looking)

Bake at 350 for about 20-25 minutes, until the edges and tops are golden.

Cool for a bit, and then dig in.
