So, I don't know about you, but I really like a mid morning snack. I found this recipe for a healthy granola bar that was easy to make and, you can make it dairy and gluten free. This bar is not like a boxed store bought bar. It's not as sweet, so if you're expecting it to be really sweet you might be disappointed. To be honest, I wasn't sure at first, but as the week went on, I liked it more and more. If you prefer it on the sweeter side, choose the honey option as the ingredient - it might give you a bit more sweetness than the maple syrup. It's a really satisfying snack, good texture, a nice peanut butter flavor and great if you're looking for a healthy alternative to a boxed granola bar.
Let's get baking....
In a bowl, combine and mix well 3 c. oats (I use gluten free quick oats) 3/4 c. natural peanut butter 1/3 c. maple syrup or honey 1/2 mini chocolate chips (I used dairy free) 2 large eggs
Press into a parchment lined 9x9 baking dish. (make sure you have pressed this firmly into the pan)
Bake at 350 for about 15 minutes, until the center is baked through.
