I make granola every week. I have a few kinds that I make on rotation. We grab it by the handful for a snack or use it on our granola and smoothie bowls. It's delicious! It's healthy, full of good stuff, crunchy and is a nice, filling, satisfying snack.
Cranberry, Almond, White Chocolate Granola
In a large bowl, mix together
4 c. large flake oats
1 c. sliced, raw almonds
1/2 c. unsweetened coconut
3/4 tsp. cinnamon
1/2 tsp. sea salt
In a separate bowl
1/4 c. melted coconut oil
1/4 tsp. vanilla
1/4 c. maple syrup
Pour over the oat mixture
Spread onto a parchment lined baking sheet
Bake at 350 for 20 minutes, stirring 1/2 way through.
Let cool and add in
1 c. dried cranberries
1/2 c. white chocolate chips.
Store in an airtight container.
