Some cookies are turn into a classic cookie because they are just a really good cookie! This cookie has been around forever. It's sometimes called a blossom cookie, but today I'm calling it a Peanut Butter Kiss Cookie in honor of Valentine's Day on Monday. This is a great combo of peanut butter with chocolate, looks pretty and tastes - well, you know I'd never post a cookie recipe that doesn't taste great! So make this cookie for your kids, friends, neighbor, grandkids or just for a sweet indulgence for yourself - you'll be happy you did;)
In a bowl, beat together, until well mixed
1/2 c. sugar
1/2 c. b. sugar (packed)
1/2 c. creamy peanut butter
1/2 c. softened butter or margarine (I used butter)
1 egg
Stir in until combined
1 1/2 c. flour
3/4 tsp. b. soda
1/2 tsp. b. powder
Scoop into 1" balls (I used my cookie scoop), rolling them in your hands.
Sprinkle sugar onto a plate and roll your cookie balls into the sugar. Place onto a parchment lined baking sheet.
Bake at 350 until light golden brown - about 8-9 minutes.
Remove from oven and place an unwrapped milk chocolate Hershey kiss into the hot cookie.
Let cool.
Enjoy and Happy Valentine's Day:)
