Here is a recipe that I've been making since before pumpkin recipes were a thing! It's super easy, really quick and uses bran and whole wheat flour. You could cut the sugar a bit, but you decide after you make them;) I'm also using the Spice Affair Pumpkin Spice that we sell in the shop. Last week I mentioned the Apple Pie Spice that I really like and the Pumpkin does not disappoint. It's a the perfect blend of cinnamon, ginger and nutmeg - just great in all your pumpkin baking. This muffin is a really moist muffin - you could add some raisins into the mix if you like for extra nutrition and sweetness but I like them without - your choice. Now, let's get onto the recipe....
Pumpkin Muffins
Combine 3/4 c. bran 3/4 c. whole wheat flour 3/4 c. sugar 1 1/2 tsp. pumpkin pie spice 1 tsp. b. powder 1 tsp. b. soda 1/2 tsp. salt
Mix together 1 c. pumpkin puree 2 eggs 1/2. c. vegetable oil 1/2 c. plain yogurt
Add the wet ingredients to the dry, mixing until just combined
Spoon into paper lined or lightly greased muffin tins Bake at 350 for about 20-25 minutes, until the top springs back when lightly touched.
