Doesn't everyone love Rice Krispie bars? But don't we all wish there wasn't so much sugar in them? I found this recipe, changed it a bit, made it twice this week and I think I've found the solution! This recipe is so satisfying. It's has the rice krispie crunch, a good amount of sweetness and it's made with all healthy ingredients. Head scratcher? Nope just easy, peasy goodness:) - cue the fireworks! Give it a try - I think you'll like it.
Rice Krispie Seed & Nut Bar Add to a large bowl 2 3/4 c. rice krispies (can use brown rice or regular) **1 c. roasted, salted chopped peanuts 1/2 c. unsalted sunflower seeds
In a saucepan, combine 1 c. peanut butter (natural or not, either works) 2/3 c. honey Let melt, stirring until smooth.
Pour over the rice krispie mixture.
Press firmly into a parchment paper lined 8x8 pan (use a little peanut butter to hold the paper in place) * quick tip - I also place parchment on top of the mixture so I can really press down without getting my hands sticky.
Pop into fridge until set, remove and cut into bars or bite sized pieces.
**if you don't have roasted peanuts - easy enough to do. Spread your peanuts onto a parchment lined baking sheet, sprinkle with salt (I use sea salt), roast at 350 for about 15 minutes - let cool, chop and they are recipe ready.
