Here's a recipe that is just so much fun. Is it a bit of work? Yes, but not too much! This is great if you have kids - gets them involved in their meal and maybe it will get them eating their veggies;) No kids, it's still a fun way to add a bit of a smile to your Sunday dinner.
You can use whatever cookie cutters you have on hand that will fit the size of your potatoes. No cookie cutters, just cut them into fun shapes - the sky's the limit with this idea.
Star Spuds
Add
Large potatoes (as many as you like), cut in half,
to a pot of salted, water and bring to boil.
Let boil until fork tender (don't let them get too soft) and drain.
Once the potatoes are cool enough to touch, the fun begins!
Cut the potatoes into 1/4-1/2" slices, lay flat and using your cookie cutters, cut them into the shapes you want.
Place them onto a parchment lined baking sheet, rub them with olive oil, sprinkle with salt and pepper and roast for about 30-35 minutes, turning once.
(p.s. the longer you roast, the crispier they'll be)
Remove from pan and eat up!
