How many of you love a good salad? I take a salad for lunch 98% of the time (no joke). I have to say, I didn't really enjoy salad, unless I was eating out, when I made it myself. I think it was because I didn't really like the bottled, premade salad dressings. So, I started to make my own dressings. Life changing! Homemade salad dressings taste so much fresher, you can control the ingredients, and they're as tasty as you want them to be. This dressing is a fav of mine and I love it on the salad combo below. It's a filling salad with the chicken (I use rotisserie chicken if I don't have any in my fridge), avocado, and almonds - all of which keeps me full most of the afternoon and the spinach and strawberries are full of lots of good stuff. It's a feel good, really yummy salad:)

Spinach Salad

Dressing
Combine
1/4 c. light olive oil
1/4 c. fresh squeezed orange juice
2 tbsp. fresh squeezed lemon juice
2 tbsp. dijon mustard
1 tbsp. apple cider vinegar
1 tbsp. liquid honey
1 tsp. grated orange zest
1/4 tsp. sea salt
1/4 tsp. fresh ground pepper
You can put this into blender and mix, use a whisk or I put it into my salad mix bottle and give it a good shake.
Stores in the fridge for about a week - just give it a good shake or stir before you put it on your salad.

Salad - I'm not giving the exact amounts - you can use whatever amounts you like depending on the size of salad you are making.
Fresh baby spinach
fresh sliced strawberries
cooked chicken breast cut into chunks
peeled cucumber, diced
avocado, sliced or cubed
sliced almonds

Combine and toss gently.
