A recipe for a cozy, comforting chicken pie is on the list for today! These pies are a bit of work, but so worth it. This recipe is quite easy, not too many steps and if you're like me, just buy a premade pie crust. It's a simple kind of pie with a nice chicken taste. If you want a little more flavor, you can add in some garlic and mushrooms which is quite delish. I have to say, I loved how my crust turned out. I had seen Jamie Oliver do this on a pie and I will always be doing this. It's fun, looks great and if you have kids, it's a great way to get them involved - they love cutting out the shapes!

So let's get to the recipe. . .

Chicken Pot Pie

In a large saucepan or dutch oven
Melt 6 tbsp. butter
Add in and saute for about 8 minutes until softened
1 chopped medium onion
2 medium carrots - thinly sliced

Add in 1/3 c. flour and stir for a minute or 2
Add in
2 c. chicken stock
1/2 c. cream
Cook for about 1 minute until mixture is like a thick, gravy consistency.
Add in (or season to taste - feel free to add in some chicken bouillon if you need)
1-2 tsp. salt
1/4 tsp. ground black pepper

Add in and stir to combine
4 cups chicken, shredded or chopped
1 c. frozen peas

Pour the mixture into a baking dish or 9" pie dish

Let cool slightly, while you prepare your dough.

You can make your own pie dough or use a frozen pie shell.

I used a frozen shell, that I let thaw slightly and cut out star shapes for the top of my pie.

Bake at 400 for about 30 minutes or until crust is golden and you can see the bubbling gravy. (if the pastry is getting too dark, just cover with tinfoil - shiny side down)

Let rest for a few minutes before serving.
