You all know that I'm team cake when it comes to cakes and pies. You also know that I like my recipes to be easy and quick. So, here is one that checks all my boxes.
This is the easiest chocolate cake you will ever make! It's dairy free, 1 bowl or no bowl - you choose and comes together super fast! It's a thinner cake if you make it in an 8x11 pan, almost like a sheet cake but a bit thicker. Want it to be a thicker cake, change the pan size but watch your baking time. Want it iced - great! I've added a dairy free icing recipe that I really like - it's not too sweet and really good. Don't want icing - no problem - this cake is good without too. So, here we go - get ready to bake:)
 
Chocolate Snack Cake
 
In a bowl or in your baking dish, add in and give a quick stir to combine
1 1/2 c. flour
1 c. sugar
1/2 tsp. salt
1 1/2 tsp. b. soda
3 tbsp. cocoa
 
Add to the dry
6 tbsp. veg. oil
1 tbsp. white vinegar
1 tsp. vanilla
1 c. cold water
 
Stir until well blended.
If using a bowl, pour into your 8x11 baking dish.
 
Bake at 350 for about 20-30 minutes - you can use a different size pan, just watch your baking times. Bake until the top is set and springs back when lightly touched or a toothpick comes out clean.
 
Dairy Free Chocolate Icing
In the bowl of your stand mixer
add
2 c. icing sugar
3/4 c. cocoa
1/4 c. unsweetened almond milk
1/2 tsp. vanilla
* you can add in 1/4 c. dairy free butter if you like - I've done it both ways - with and without and both are good.
Beat for about 1 minute until smooth. (tip - cover your stand mixer with a tea towel to avoid the icing sugar dusting your countertop)
Spread over your cooled cake and....
