It's so fun to take a much loved recipe and turn it into a seasonal treat! This recipe has been in my recipe box forever - I've made it sooo many times that my recipe card is tattered and stained (p.s. I'm a very messy baker) So why not add a little Halloween fun to this cookie? I found these Scaries Smarties in Halloween colors and thought they'd be perfect. Were they perfect? Hmmm, taste wise yes, but I have to say, I was a little disappointed with the colors. They were so faded, not bright smartie colors like they used to be. Has anyone else noticed this? But, back to this cookie. I like this cookie because it's dairy free, so if you have anyone needing this option, this cookie is delish and is great as a cookie, as the base for ice cream sandwiches, freezes well and is an all-round staple in our house. You can add nuts, chocolate chips or any other mix in you like and it works. So.... let's get baking:)

Oatmeal Smartie Cookie

In a large bowl, mix together (you can use your stand mixer)
1 c. shortening
1 c. b. sugar
1 c. sugar
2 eggs
2 tbsp. water
1 tbsp. vanilla

When combined, add in and mix well
3 c. oat flour (or 1 1/2 c. all purpose flour)
1 tsp. b. soda
1/2 tsp salt
now add in a mix together
3 c. quick oats

Add in smarties, m & m's or chocolate chips (as many as you like)

Drop by spoonful - make them as big or as small as you like, just watch your baking time.

I used my cookie scoop and baked these for 9 minutes at 350. Quick note, they don't brown a lot, so watch when they are more set than golden. Best when not overbaked.
