Happy Halloween! I don't have a Halloween recipe for you today but I have one that is spooktacularly, devilishly delicious and is deadly good! (there - is that enough of a reference to Halloween - lol) Anyway, this bar really is all those things! It is a bar that brings so many of my favorite things together - chocolate chips, chocolate chip cookies and caramel - I mean, come on, what's not to love? The chocolate chip cookie mixed with the gooey, caramel - my heart sings:) It's super easy, most time consuming part is unwrapping the candies - but pop one (let's be real - maybe more- like five), into your mouth while your unwrapping them and it doesn't seem as tedious - lol. So, let's get baking....
Caramel Chocolate Chip Cookie Bar
Add to a large bowl or the bowl of your stand mixer and mix until smooth
1 c. unsalted, melted butter
2/3 c. sugar
1 c. b. sugar, packed
Add in and mix
2 large eggs
1 tsp. vanilla (I used 1 tbsp. - I just like vanilla!)
Add in and mix well
1 tsp. b. soda
1 tsp. salt (I use fine sea salt)
3 c. flour (tip - if using your stand mixer, cover the mixer with a tea towel to prevent a dusting when you mix it in, and add in slowly)
2-2 1/2 c. chocolate chips
Line a 9x12 pan with parchment paper.
Press half the dough into the bottom of the pan.
2nd layer
In a microwave safe bowl or a saucepan add in and mix until smooth and pour over the cookie base (if using the microwave, heat the caramels in increments until the mixture has melted)
2 1/2 packages of the 230g size package of werther's chewy caramels, unwrapped
1/2 c. whipping cream
1 tbsp. flour
Pour over the cookie base.
Using your hands, grab a handful of the remaining cookie dough and flatten between your hands - place it on top of the cookie dough - there may be a bit of caramel showing thru - that's ok.
Bake at 350 for about 30 minutes, until the top is golden .
Cool and slice into bars.
