You all know I can't resist a good cookie!  This is a GOOD cookie and it's gluten free, which in my family, is important.  The great thing about this cookie, is that no one can tell it's gluen free - gotta love that.  I also love that this makes a generous amount of cookies that freeze beautifully (if they make it to the freezer!)  I have made this recipe too many times to count.  I've made them giant - like in the photo - which is quite impressive looking and I've made them bite size for a small little treat.  Whichever size you decide on, it will be a GOOD cookie!

Let's bake. . . 

Monster Cookies - Gluten Free

Cream together
1/2 c. butter (room temp)
1 1/2 c. b. sugar
1 c. white sugar

Beat in
3 eggs

Add in and mix together
1 1/2 c. peanut butter
1 tsp. vanilla

Add in mix well
2 tsp. b. soda
2 tbsp. cornstarch
1 tsp. salt
4 1/2 c. oats (gluten free if you need)

Add in (if I'm making these into bite size cookies, I use the mini sizes)
2 c.  m&m's 
1 c. chocolate chips 

*you can pop this into the fridge for 15 minutes to harden slightly, you can keep it in the fridge for a few days and I have baked them from room temp - all worked for me!

Drop onto a parchment lined baking sheet and bake at 350.  Baking time will depend on the size of your cookie - anywhere from 6-12 minutes.
