I really love baking loaves. They're quick, great to freeze and there's something about a slice. It just looks nice, lol. This recipe is from 'preppy kitchen'. I have tried quite a few of his recipes and have loved them all. I thought I would share this one, as it's one of my favorites. It's incredibly moist, lovely flavor and the glaze is delish!
Let's bake. . .
Maple Glazed Pumpkin Loaf
Loaf
Into a bowl add in and whisk together
1 3/4 c. flour
1 tbsp. pumpkin pie spice
1 tsp. b. powder
1 tsp. b. soda
1/2 tsp. salt
In a separate bowl, mix together
1 15 oz can pumpkin (or a scant 2 cups)
3/4 c. b. sugar
1/2 c. veg. oil
2 lg. eggs
1/4 c. maple syrup
2 tsp. vanilla
Add the pumpkin mixture to the flour mixture and stir until combined (don't overmix)
Pour into a greased or parchment lined loaf pan.
Bake at 350 until the top springs back or a toothpick comes out clean. Baking times will vary depending on the size of your pan - mine takes about 55-60 minutes.
Let cool for about 20 minutes and remove from pan.
Maple Glaze
Mix together, until you have a smooth, spreadable consistency. (Add more maple syrup if needed.)
2 c. icing sugar
4 . melted, unsalted butter
2 tbsp. maple syrup
pinch of salt.
Spread the glaze over the cooled loaf and . . .
