Winner, winner chicken dinner! This is a recipe from a cookbook that just arrived into the store this week. It's from Sally's Baking 101 - and yes, we have quite a few copies in the store:) This is a cookbook I've been waiting for as she is a favorite baker of mine. I follow her on insta and really like what she does. So.... this recipe - sooooo good! It's easy to make, nothing fancy in the ingredients and the cinnamon swirl in the centre is 'chef's kiss' - the texture, sweetness - all good! Oh, and the smell when it's baking - it's like fall came in the door.
Let's bake. . .
In a bowl, mix together
2 c. flour (spooned into the measuring cup)
1 tsp. b. soda
1/2 tsp. salt
In a separate bowl, whisk together (all ingredients should be room temp)
3/4 c. sugar
2/3 c. milk
1/3 c. veg. oil
1/3 c. full fat sour cream
1 large egg
1 1/2 tsp. vanilla
Add the wet to the dry, stirring until just combined.
Cinnamon Swirl (reserve 2 tbsp for top of loaf)
1/2 sugar
1 tbsp. cinnamon
Spread 1/2 the batter into you prepared loaf pan (you can line your pan with parchment paper or grease you pan)
Sprinkle cinnamon swirl over top remembering to save 2 tbsp for the top of the loaf.
Carefully add the rest of the batter.
With a knife, gently pull it thru the batter and swirl the layers together.
Sprinkle the remaining cinnamon swirl over the top of the loaf.
Bake at 350 for about 45-60 minutes (really depends on the size of your loaf pan)
until a toothpick comes out clean.
**cover the loaf 1/2 way thru with tinfoil (shiny side down) so the top doesn't overbake (it's ok if you don't, will just be a little bit crunchier on the top)
When cool, drizzle vanilla icing over top
Vanilla Icing
1 c. icing sugar
2-3 tbsp milk or cream until you get the consistency you like
