Have we all been behaving this week? I think we deserve a little something. We're almost thru January, the weather has been great, it's Sale season in the store (awesome deals if you haven't been in) and only 2 more months of winter! Let's celebrate that:) So, my little grandson (he's 2) loves to 'cheers' everything! We 'cheers' milk, we 'cheers' cookies, we 'cheers' strawberries - it's incredibly sweet, says a very smitten grandma and these cookies deserve a 'cheers!' Let's break them down. Firstly, they're cereal - so a bit healthy (a stretch but let's give them that), 2nd, they're so easy - just a pot on the stove and 1 bowl. Next, they're delish! They're not really crunchy, more of a nice chew but the crunch comes from the cornflake and lastly, yes I had to add a bit of chocolate. Completely unnecessary for most but necessary for my chocolate craving LOL. That's the rundown, the final answer - these are a winner, a recipe to be kept in your recipe box for when you need a fast treat.
Let's get to the recipe. . .
Cornflake Clusters
In a large bowl add in and set aside
6 c. cornflakes
In a saucepan cook over medium heat until it just begins to bubble, stirring constantly
1 c. corn syrup
1 c. sugar
1 tsp. salt
Remove from heat and stir in until smooth
1 c. creamy peanut butter
1 tsp. vanilla
Pour the peanut butter mixture over the cornflakes, mixing until all the cereal is covered.
Drop by spoonfuls onto a parchment lined tray - making them whatever size you like.
Chocolate Drizzle (optional)
Melt milk chocolate chips until drizzle consistency.
Drizzle over top of cornflake cookies
