Still have zucchini sitting on your counter looking at you every day or in your fridge giving you the stink eye every time you open it, just waiting for you to put it into something delish? Well if you do, here's a recipe that you'll want to make on repeat. It's a really nice oatmeal chocolate chip cookie with the added bonus of zucchini to keep them nice and soft and moist - just what you want in an oatmeal cookie:)

So, let's get to it.....

Zucchini Oatmeal Chocolate Chip Cookies

Add to a bowl,
2 c, quick oats
1 c. flour (spooned into measure)
1/2 tsp. b. soda
1/2 tsp. salt

In the bowl of your mixer, combine until smooth
1/2 c. unsalted butter (room temp)
1/2 c. packed b. sugar
1/2 c. sugar

Add to the butter mixture
1 large egg
1 1/2 tsp. vanilla

Add the dry ingredients to the wet

Add in
1 c. shredded zucchini (if it's really wet, just blot it a bit) (I like to peel mine, but that's totally up to you)

Add in by hand
1 c. chocolate chips or however many you want - I usually free hand this step;)

Drop onto a parchment lined baking sheet and bake for about 9 minutes at 350 until they are nicely golden.
