This is a recipe I found that said it was the 'best pumpkin cake ever' and 'the only pumpkin cake recipe you'll ever need'. Hmmmm, well of course I had to try it. Was it right - you bet it was! This cake has perfect crumb texture, the right level of cinnamon and pumpkin pie spice, is so delightfully moist and with my cinnamon cream cheese icing, it's a 10 of a cake. Even my 'I don't like pumpkin' taster all of a sudden likes pumpkin - he had 2 pieces;) So if you're looking for a pumpkin cake (no special holiday needed for this one) go ahead give it a try - oh and did I mention - it's super easy - 2 bowls, no special ingredients and you're done.

(1 more thing - you can cut this recipe in half for a smaller cake, but the baking time will be quite a bit shorter - about 20 minutes)

Let's get to it....

Pumpkin Cake

In a bowl, whisk together
2 c. flour (spooned into measure)
2 tsp. b. powder
1 tsp. b. soda
1 tsp. salt
1 tsp. cinnamon
2 tsp. A spice Affair Pumpkin Spice (available in the store and online)

In a separate bowl, mix together until smooth
1 c. canola oil
4 large eggs
1 c. packed b. sugar
1/2 c. sugar
1 can (398ml) pumpkin puree
1 1/2 tsp. vanilla

Add to the dry mixture, mixing until combined (batter is thick)

Pour into a greased 9x12 baking dish and bake at 350 for about 35-45 minutes (baking times may vary so, check often at the end)

Remove and let cool.

*Cinnamon Cream Cheese Icing
In the bowl of your stand mixer with your paddle attachment, beat together (for about 2 minutes)
1 8 oz cream cheese (room temp)
1/2 c. unsalted butter (room temp)
1/8 tsp. fine sea salt

On low speed, slowly add in
3 3/4 c. icing sugar

When incorporated, increase your speed to medium and add in
1 1/2 tsp. cinnamon
1/4 tsp. vanilla
Beat for 1-2 minutes until well mixed

Ice your cake and get ready for the compliments!

*this recipe will make too much for your cake, but I store my leftover in the freezer for later use. It's great on cinnamon buns, cupcakes, carrot cake, pumpkin loaf - whatever you like, it's just nice to have on hand.
