Zucchini in a Cookie? Yup and You'll Love Them!
We all love a good cookie, right? And we all know that a chocolate chip is probably the #1 cookie. But this cookie could take it's place! It's a bit healthier with the oatmeal and zucchini, has chocolate chips and the taste is perfection. This cookie is a softer, moist cookie with that great cookie texture - and a great way to use up zucchini - a really, really good cookie:)
Oatmeal Chocolate Chip Zucchini Cookie
1 cup grated zucchini (you can peel or not) (if it's really wet, blot lightly to remove some of the excess moisture)
Set aside
In a bowl combine
2 c. quick oats
1 c. flour (spooned into measuring cup)
1/2 tsp. b.soda
1/2 tsp. salt
1/2 tsp. cinnamon
In the bowl of your stand mixer, beat together for about 2 minutes
1/2 c. softened unsalted butter
1/2 c. b. sugar (you can use either but I used dark)
1/2 c. sugar
Add in 1 large egg
1 tbsp. maple syrup
1 1/2 tsp. vanilla
Add the dry ingredients and the zucchini to the butter mixture until combined.
Add in 1/2 c. chocolate chips.
Drop by spoonful onto a parchment lined baking sheet.
Bake at 350 for about 9-12 minutes (depending on the size of your cookie).
