Are you a pie or crisp person? I hate to admit, but I really don't care for pies. Give me a crisp or a crumble and I'm a happy girl:) I love the look of pies, I love pie dishes in my cupboard (and yes, most have never seen a pie lol), and the thought of pies makes me smile - they always look so beautiful. But I just don't really like the crust - unless it's a graham wafer crust - then I'll eat the pie;) So here's a recipe for peach crisp with 2 different options for toppings - both really good. One is dairy and gluten free, the other is a regular crisp topping - I hope 1 of these will work for your family cause it's peach season and you deserve this crisp!
Peach Crisp
In a bowl combine and mix together 5 large ripe peaches that you have peeled and sliced 1 tbsp. cornstarch 1 tbsp. b. sugar 1 tsp. fresh lemon juice 1 tsp. vanilla 1 tsp. cinnamon Pour into a greased dish (about an 8x8 sized baking pan - I used 2 individual lasagna sized pans)
Topping (Dairy free option & gluten free) Mix together 1/2 c. oats (I used quick oats) - if doing gluten free make sure your oats are GF 1/2 c. almond flour 1/2 c. b. sugar 1/2 tsp. cinnamon 1/4 tsp. sea salt Add in 1/4 firm coconut oil - working this in until the mixture is crumbly (yes, you can use your hands) Spread over top of the peach mixture Bake at 350 until the top is golden and the peach mixture is bubbling around the edges - about 30 minutes.
Topping (option 2) Mix together 1/2 c. flour 1/2 c. b. sugar 1 c. oats 1 tsp. cinnamon 1/4 tsp. salt Pour in 1/2 melted butter, mixing until crumbly Add the topping to your peach mixture and bake at 350 until the top is golden and the peach mixture is bubbling around the edges - about 30 minutes.
Serve with vanilla ice cream (use a dairy free ice cream if you need)
